Description
This is the Hobart Profi AMXXL with VAPOSTOP ER exhaust heat recovery built in. It’s Hobart’s largest hood type machine. The 540mm chamber takes up to 24 plates per rack, eight 600 x 400mm baking sheets, eight 660 x 500mm trays or two 1/1 gastronorm boxes in one load. It can be set up straight-through or in a corner, so it fits most dish area layouts.
VAPOSTOP captures heat from the exhaust air to cut energy use, and stops steam escaping into your kitchen when the hood opens. Hobart says it removes the need for a separate exhaust canopy in most installations. It adds about 45 seconds to each cycle, but staff can interrupt it when needed.
It has all the smart features of the Profi range. Staff run it from a colour touchscreen, the wash arms clean themselves every cycle, SENSO-ACTIVE keeps rinse water to a minimum, and the SmartConnect app shows usage, running costs and service information.

Good to know before you buy
The standard model draws 16.5kW on a three-phase 3 x 32A supply, so have an electrician check your power before ordering. With the hood raised, it stands 2195mm tall. In a corner setup, keep the right-hand side accessible for servicing. Ventilation requirements vary by site, so check yours before relying on VAPOSTOP in place of a canopy. If your water hardness is above 3°dH, Hobart recommends a Hydroline water treatment system.
