Description
The Precipan replaces several pieces of kitchen equipment with one. It simmers, grills, braises, sautés, pan fries, steams, boils, deep fries and pressure cooks in a single 105-litre pan. It suits production kitchens, hospitals, aged care, schools and catering operations cooking soups, sauces, stews, curries, pasta and fried food in volume.
The 15mm-thick base has a 316 stainless steel cooking surface, and the heating is split into two zones, so the pan only heats where the food is. Temperature is adjustable from 40 to 250°C. Staff run it from a 7-inch colour touchscreen with a control dial, which stores more than 60 cooking programs, runs up to five stages per cycle, and records cooking data to USB for HACCP records. It fills itself with a measured amount of water, and the electric tilt stops at any angle. A wide pour spout empties the pan cleanly over the floor gully.
This high-power model comes with the pressure lid and automatic basket lift included. Pressure cooking cuts cooking times for stocks, braises and tougher cuts, and the basket lift raises pasta, vegetables or fried food out of the pan automatically when they’re done. A 15A power point on the front lets staff plug in a stick blender for soups and purées.

Good to know before you buy
The pan needs a three-phase 400V supply on a 50A C-curve breaker (28.2kW), so have an electrician check your power before ordering. It needs a cold water connection (hot water is optional), a stop cock nearby, and a drain with a trap. A floor gully at least 550 x 800mm is needed in front of the pan to catch the pour. It’s designed to stand against a wall and can be bolted to it. With the lid open, it stands 1856mm tall. It comes on a 200mm fixed stand with adjustable feet. The mobile stand with castors shown in one photo is an optional accessory.
